A synthetic preservative found in soft drinks, fruit juices, and pickled products. It works by inhibiting the growth of bacteria, yeast, and mould, extending shelf life. When combined with vitamin C (ascorbic acid) in drinks, it can form benzene — a known carcinogen — in trace amounts. Generally considered safe at permitted levels by EFSA and FDA, but some studies link it to hyperactivity in children, particularly in combination with certain artificial colours.
