A synthetic preservative widely used in acidic foods and drinks — soft drinks, fruit juices, pickles, and condiments. It stops mould and bacteria from growing, extending shelf life. When combined with vitamin C (ascorbic acid) in drinks, it can form benzene, a known carcinogen — though levels are typically low. EFSA and FDA consider it safe at authorised levels, but some studies link it to hyperactivity in children, particularly in combination with certain artificial colours.
