A synthetic yellow-green dye used to colour a wide range of processed foods, from mustard and sauces to fish roe and batters. It gives food a distinctive greenish-yellow shade not achievable with natural alternatives. In the EU, it must carry a warning label stating it 'may have an adverse effect on activity and attention in children' — this follows EFSA findings linking certain synthetic dyes to hyperactivity. Banned in the USA, Australia, and Japan. Considered safe within EU limits, but worth avoiding if you have children or sensitivity concerns.
