A synthetic blue dye used to give food a vivid blue or blue-green colour. Found in some preserved fruits, vegetables, and pickled products — though relatively uncommon in everyday foods. Not approved by the FDA in the USA, but permitted in the EU in limited categories. Some people may experience allergic reactions, particularly those sensitive to aspirin.
