It helps maintain smooth texture and prevents separation during processing and storage. Derived from natural starch (usually corn, potato, or wheat), then chemically modified to improve its stability under heat, acid, and freezing conditions. Generally recognised as safe by EFSA and FDA. No significant health concerns at typical dietary levels, though it offers no nutritional value beyond calories.

This additive is authorised to be used in the following 4 food categories:
