A modified starch made by chemically treating regular starch with acetic anhydride and adipic anhydride. It acts as a thickener and stabilizer, helping foods maintain a smooth, consistent texture — even after freezing, heating, or long storage. Found in dairy products, baby foods, and cereal-based foods for young children. Approved by EFSA and considered safe at levels used in food, though its use in infant and baby products is tightly regulated and limited.
