A modified starch used as an emulsifier and stabiliser — it helps fat and water mix smoothly, preventing separation in products. Commonly found in infant foods, special medical nutrition, fermented dairy products, and processed cereals. It's synthetically modified from natural starch using octenyl succinic anhydride. EFSA has reviewed it and considers it safe at authorised levels, including for infant use. The body breaks it down similarly to regular starch. No significant safety concerns have been raised at typical food use levels.

Conditions of Use

This additive is authorised to be used in the following 6 food categories:
