A modified starch used as a thickener and stabiliser. It's made by chemically treating starch — typically from corn, wheat, or potato — with acetic anhydride and an oxidising agent to improve its texture and heat stability. You'll find it in low-fat fermented dairy products and processed cereal-based baby foods. Its use is quite limited compared to other modified starches.
