A synthetic ester of citric acid, used as a plasticiser and stabiliser — mainly to help coatings and encapsulations hold their shape in solid food supplements. Also used in processed egg products to stabilise foams and improve texture. Considered safe by EFSA at the levels permitted in food. Not a controversial additive.
