A dark brown colouring made by heating sugars with ammonia compounds. It gives foods and drinks their characteristic deep brown colour — think dark beers and some breakfast cereals. Entirely synthetic in production process. Some animal studies raised concerns about compounds formed during production, though EFSA considers it safe at approved levels. It is one of the less widely used caramel colours, authorised only in a handful of food categories.
