A synthetic dark-brown colouring made by heating sugars with both sulphite and ammonia compounds. It is the most widely used caramel colour, found in cola drinks, beer, and some sauces. EFSA and WHO have flagged a compound formed during its production — 4-MEI — as a potential carcinogen in animal studies. California has set limits requiring warning labels on products with significant levels.
