A natural orange-yellow pigment found in carrots, sweet potatoes, and many other plants. Used to colour foods ranging from cheeses and margarines to breakfast cereals and processed meats. Beta-carotene also acts as a provitamin A — your body converts it into vitamin A as needed. Well-studied and considered safe by EFSA and FDA at typical food levels. No significant health concerns for most people. High-dose supplements are a different story — but that's not relevant to food use.
