A natural red pigment found abundantly in tomatoes, watermelon, and pink grapefruit. Used as a colouring agent in processed foods, snacks, confectionery, dairy products, and food supplements. It gives foods a red to orange-red hue. Beyond colouring, lycopene is a powerful antioxidant. Regular dietary intake has been associated with reduced risk of certain cancers and cardiovascular benefits, though these effects come from whole foods rather than isolated additives. Considered safe by EFSA and FDA.
