A synthetic carotenoid used as an orange-yellow colourant, closely related to beta-carotene found naturally in carrots and other vegetables. It appears in processed cheeses, some fish products, and fruit or vegetable preparations to enhance or standardise colour. Approved by EFSA and considered safe at permitted levels. It can convert to vitamin A in the body, similar to natural carotenoids.
