A white mineral used as an acidity regulator, anti-caking agent, and calcium supplement in a wide range of foods — from cheeses and cereals to fruit juices and baby foods. It's the same compound found naturally in chalk, limestone, and eggshells. Generally considered very safe. It's often added to fortify foods with calcium, which is a genuine nutritional benefit. At normal dietary levels, no health concerns are established by EFSA or FDA.
