A calcium salt form of sorbic acid, used as a preservative to inhibit mould and yeast growth in food. It was previously permitted in limited food categories but has since been removed from the EU approved additives list. With authorisation in only one category before deletion, its use was already narrow. As a sorbate compound, it was generally considered safe at permitted levels, similar to its relatives potassium sorbate and sorbic acid.
