When combined with vitamin C (ascorbic acid) in drinks, it can form benzene — a known carcinogen — in trace amounts. Generally considered safe at permitted levels by EFSA and FDA, but some studies link it to hyperactivity in children, particularly in combination with certain artificial colours.
