A preservative and antioxidant used mainly in wine, dried fruits, and fruit juices. It prevents browning and inhibits microbial growth, keeping products shelf-stable. Natural origin — produced during fermentation — but commercially added in synthetic form. Some people, particularly asthmatics, are sensitive to it and may experience breathing difficulties or headaches. EFSA and FDA consider it safe at permitted levels, but it must be declared on labels when above 10 mg/kg. Worth watching if you have respiratory sensitivities.
