A preservative and antioxidant that prevents browning and microbial growth. Found in dried fruits, wines, and some processed foods. Synthetic in origin, derived from sulfur dioxide chemistry. Safe for most people in typical amounts, but a known concern for asthmatics — sulfites can trigger breathing difficulties and allergic reactions in sensitive individuals. The FDA requires labeling when sulfites are present above 10 ppm.
