A preservative that works by releasing sulphur dioxide, which inhibits bacteria and moulds. Found in very few food categories — its use is tightly restricted in the EU. Like all sulphites, it can trigger asthma attacks and allergic reactions in sensitive individuals, particularly those with sulphite intolerance. EU law requires labelling when sulphites exceed 10 mg/kg.
