A preservative used to prevent browning and microbial spoilage in food and beverages. It releases sulphur dioxide, which is the active preserving agent. Authorised in very few food categories, so exposure is typically low. People with sulphite sensitivity or asthma should be cautious — sulphites can trigger breathing difficulties and allergic reactions in sensitive individuals. EU law requires labelling when sulphites exceed 10 mg/kg or 10 mg/L.
