A preservative authorised in the EU exclusively for one product: traditional sturgeon caviar. It prevents bacterial growth and maintains the texture and appearance of the roe during storage. Boric acid is a naturally occurring mineral compound, but it is toxic in larger doses and accumulates in the body over time. Its use is tightly restricted precisely because of these concerns — healthy adults consuming caviar occasionally are exposed to very small amounts.
