A fat-soluble antioxidant derived from vitamin C (ascorbic acid) and fatty acids — entirely natural in origin. It prevents fats and oils from going rancid and is used in baked goods, infant formula, cooking fats, and baby foods. Because it is based on vitamin C, it is generally considered very safe even for infants. EFSA has evaluated it positively, and it carries no notable controversies. It does the same job as vitamin C but works in fatty rather than watery environments.
