A naturally derived mineral salt formed when lactic acid combines with calcium. Used as an acidity regulator, firming agent, and preservative in canned fruits, jams, bread, and meat preparations. It also serves as a calcium supplement in some foods. Well-tolerated by most people and considered safe by EFSA and FDA. Because it's a bioavailable form of calcium, it's even approved in baby foods. No significant health concerns at typical dietary levels.
