A salt of citric acid derived from potassium — used as an acidity regulator, buffer, and emulsifying salt in a wide range of foods. Found in canned fruits and vegetables, dairy products, infant formula, frozen produce, and processed foods. It helps stabilise pH and improve texture. Generally recognised as safe by EFSA and FDA. Potassium is an essential mineral, so this additive can actually contribute a small dietary benefit. Well tolerated by most people, including infants when used in formula at regulated levels.
