An acidity regulator and stabiliser derived from tartaric acid, which occurs naturally in grapes and wine production. It helps control pH and improve texture in processed foods. Found in canned fruits and vegetables, tabletop sweetener tablets, and some baby cereals. Generally considered safe by EFSA and FDA with no significant health concerns at typical food use levels. The potassium form may even contribute a small amount of dietary potassium, an essential mineral.
