A salt formed from tartaric acid — a naturally occurring acid found in grapes and wine. It acts as a stabiliser and acidity regulator, mainly helping to maintain texture and prevent crystallisation in processed foods. Found in a narrow range of products, primarily canned or bottled fruit and vegetables. Considered safe at typical use levels by EFSA and FDA. No significant health concerns at normal dietary exposure. One of the more benign additives you'll encounter on a label.
