A group of acidity regulators and emulsifying salts derived from phosphoric acid and potassium. Used to stabilize pH, improve texture, and retain moisture — common in processed foods, cheese products, and some infant formulas. Authorized in baby foods under strict EU limits. Generally considered safe at normal dietary levels. However, high phosphate intake from multiple processed food sources may burden kidneys over time, especially in people with kidney disease. EFSA has flagged cumulative phosphate intake as worth monitoring.
