An acidity regulator and humectant derived from malic acid — the same acid that gives apples and pears their tartness. Keeps moisture in food and stabilises pH. Found mainly in jams, jellies, marmalades, and fruit spreads. Generally considered safe at levels used in food. Approved by EFSA with no significant health concerns raised. Malic acid itself occurs naturally in many fruits, and the sodium salt form behaves similarly in the body.
