A salt of malic acid used as an acidity regulator and flavor enhancer in food. It helps balance tartness and stabilize pH in processed products. Naturally found in apples and other fruits — the synthetic version used in food is considered identical in safety. Authorized in very few food categories, so exposure is generally low. No significant safety concerns have been raised by EFSA or FDA. Considered safe at levels used in food.
