A synthetic organic acid used as an acidity regulator and leavening agent in food. It gives a mild, tart flavour and helps control pH. Found mainly in baking powders and a limited range of processed foods. Generally considered safe at typical food use levels. EFSA has not raised significant concerns. It is one of the least commonly authorised food acids — approved in only one food category — so consumer exposure is low.
