An acidity regulator and buffering agent made by combining citric acid with ammonia. It helps stabilise the pH in processed dairy protein products, keeping texture and consistency intact. Found almost exclusively in edible caseinates used by food manufacturers, not in everyday consumer products. Considered safe by EFSA at levels used in food production.
