A natural thickener and stabiliser made from the seeds of the carob tree, native to the Mediterranean. Found in dairy products, ice cream, jams, baby foods, and low-fat alternatives — it improves texture and prevents ingredients from separating. Considered one of the safer food additives, with no significant safety concerns raised by EFSA or FDA. Some people with sensitive digestion may experience mild bloating, as it behaves similarly to dietary fibre.
