Guar gum

Characteristics

Additive NameGuar gum
E No.E 412
TypeIndividual Substance
In plain language

A natural thickener and stabiliser derived from guar beans, grown mainly in India and Pakistan. It's one of the most effective thickeners available — even tiny amounts create a noticeably thick texture. Found in ice creams, yogurts, sauces, gluten-free baked goods, and processed meats. Generally considered safe by EFSA and FDA. At high doses it can cause bloating or digestive discomfort, but typical food amounts are well tolerated. It also has a modest beneficial effect on blood sugar and cholesterol levels.
