A natural gum sourced from the sap of Astragalus shrubs, used as a thickener and stabiliser. It keeps textures smooth and prevents ingredients from separating. Found in tabletop sweeteners and some meat preparations. One of the oldest food additives known — used for centuries in food and pharmacy.
