A natural thickener and stabiliser harvested from the sap of acacia trees, mainly grown in sub-Saharan Africa. It keeps ingredients from separating, improves texture, and is widely used in candies, soft drinks, beer, and even baby foods. One of the better-studied additives — EFSA and FDA both consider it safe. It actually behaves like a soluble dietary fibre, feeding beneficial gut bacteria. No significant concerns at typical food use levels.
