A natural thickener and stabiliser extracted from the seeds of the tara plant, native to South America. Used to improve texture and consistency in foods, similar to locust bean gum or guar gum. Authorised in very few food categories, so you won't encounter it often. Generally considered safe — no significant health concerns have been raised by EFSA or other regulatory bodies.
