A humectant and solvent derived from fats and oils — it keeps food moist and prevents it from drying out. Found in chocolate products and liquid sweeteners, also used in some confectionery and baked goods. Naturally occurs in the body as part of fat metabolism. Considered safe at typical food use levels by EFSA and FDA, with no significant health concerns.
