A modified form of gum arabic — a natural resin from acacia trees — chemically treated with octenyl succinic anhydride to improve its ability to stabilise oil-in-water emulsions. Used mainly as an emulsifier and stabiliser in sauces, flavoured drinks, and edible coatings. Generally considered safe by EFSA and FDA. The modification makes it more effective than plain gum arabic for keeping fats and water blended together. Well tolerated by most people, though very high intakes may cause mild digestive discomfort, as with most soluble fibres.
