A thickener and gelling agent derived from the konjac plant root, native to Asia. Creates a firm, jelly-like texture in foods and is used in low-calorie products as a fat replacer. Authorised in very few food categories in the EU. Products containing it must carry a warning: "may cause choking" — regulators flagged it as a serious choking hazard, especially for children and elderly. Generally considered safe when consumed properly.
