A natural thickener and stabilizer derived from the seeds of the Cassia tree, related to cinnamon. It's used in processed cheeses, ice creams, sauces, desserts, and heat-treated meat products to improve texture and prevent separation. Generally recognized as safe by EFSA at the approved levels in food. Some animal studies raised mild concerns about digestive effects at high doses, but typical food amounts are considered well within safe limits.
