A synthetic emulsifier used to help oil and water mix smoothly in food products. It's authorised in very few food categories, primarily in certain bakery and confectionery items. Generally considered safe at levels used in food, though it belongs to the polysorbate family, which some animal studies link to gut microbiome disruption at high doses. EFSA has reviewed it and found no concern at typical dietary exposure.
