A synthetic emulsifier that keeps oil and water mixed in processed foods. It's authorized in very few food categories, which limits most people's exposure. Generally considered safe at approved levels by EFSA and FDA. Some animal studies at high doses suggest possible gut microbiome disruption, but evidence at normal dietary intake is not conclusive.
