A synthetic emulsifier that helps oil and water mix smoothly, preventing separation in food products. It belongs to the polysorbate family, derived from sorbitol and palmitic acid through a chemical process. Authorised in very few food categories, so consumer exposure is generally low. Some animal studies suggest high doses may affect gut microbiome balance, but at typical food levels it is considered safe by EFSA and FDA.
