A stabiliser and emulsifier derived from wood resin — specifically the resin tapped from pine trees, chemically modified with glycerol. Its main job is to keep citrus oils suspended evenly in drinks, so your lemonade or flavoured soda doesn't separate into a cloudy layer on top. Approved by EFSA and used in soft drinks, flavoured alcoholic beverages, and some confectionery. Considered safe at permitted levels.
