Triphosphates

Characteristics

Additive NameTriphosphates
E No.E 451
TypeIndividual Substance
In plain language

A phosphate salt used mainly as a moisture-retaining agent and stabiliser in processed seafood. It helps fish and shellfish hold water during freezing and cooking, improving texture and reducing weight loss. Naturally, phosphates occur in many foods, but added versions increase overall phosphate intake. People with kidney disease should be cautious — impaired kidneys struggle to filter excess phosphates, which can affect bone and heart health over time.
