A starch-derived molecule shaped like a hollow ring, used to trap and stabilise flavours, mask bitter tastes, or protect sensitive ingredients from breaking down. Found in confectionery, flavoured drinks, and solid food supplements. Generally considered safe at the low levels used in food. EFSA has evaluated it and set an acceptable daily intake. The body absorbs very little of it, and most passes through the digestive tract unchanged.
