A synthetic emulsifier made by combining lactic acid with fats (mono- and diglycerides). It helps mix water and oils together smoothly, improving texture and extending shelf life in baked goods and processed foods. Found mainly in bread, cakes, and infant cereal products. Considered safe by EFSA at normal usage levels, with no significant health concerns identified.
