A synthetic emulsifier that helps fats and water blend smoothly together. Made by combining citric acid with mono- and diglycerides derived from vegetable or animal fats. Found in chocolate, baked goods, and some baby formulas. Generally considered safe by EFSA and FDA. The citric acid component is naturally occurring, but the final compound is chemically processed. Its presence in infant formula is tightly regulated and used only when necessary for texture and stability.
