A synthetic emulsifier made by combining sucrose (table sugar) and fats. It helps oil and water mix smoothly, improving texture in foods like ice cream and baked goods. Authorised in very few food categories, meaning its use is quite limited in practice. Generally considered safe at permitted levels by EFSA.
